
I made some delicious taco soup for lunch tomorrow and it was super easy. I made it meatless to fit in with the fast that my church is doing*.
I based it off this recipe: Easy Taco Soup
However this is my ingredient list:
- 1 (1.25 ounce) package taco seasoning mix**
- 3 cups water
- 1 (16? ounce) can red kidney beans, rinsed and drained***
- 1 (20? ounce) can black beans, rinsed and drained***
- 1 (16? ounce) can garbanzo beans, rinsed and drained***
- 1 (15 ounce) can pinto beans, rinsed and drained***
- 1 (16 ounce) bag whole kernel corn, frozen
- 2 (14 ounce) cans diced tomatoes with green chile peppers
- 1 (1 ounce) package ranch salad dressing mix****
Notes about my recipe:
*I think I cheated a bit... Especially with the seasoning, I am unclear if it is allowed. I also don't cut out the dairy because it is something that I need medically for my health and bones.
** In place of taco seasoning use just chili powder, and cumin. and maybe black pepper. Just season until you like it!
*** I think you can use just about any bean you like in this recipe. Having a variety of beans makes it more interesting. Usually I would not used canned beans for the fast, but we were ill prepared this week and didn't have the beans to soak until I went to the store today. The rest of the recipes using beans will be made with dry beans that have been soaked.
****I used the package because I didn't think to search this before I went to the store.
Ranch seasoning:
- 1 teaspoon dried parsley
- 3/4 teaspoon ground black pepper
- 1/2 teaspoon salt
- 1/2 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 1/8 teaspoon dried thyme
- 1/8 tsp dill
